A group of our neighbors went out fishing from Puerto Los Cabos with Captain Ramon Castillo of Salty Dog Fishing Adventures. Beyond having a great time, they caught seven dorados, which Captain Ramon filleted for them. They decided to have a family and friends dinner at Zipper’s Bar and Grill on the beach in Costa Azul. Zipper’s prepared the Mahi Mahi in three ways – garlic, blackened, or deep fried. The fish was served with a choice of french fries or rice, beans, and guacamole. There were also flour tortillas for those people who wanted to make Baja Style fish tacos.
The fish was served family-style – platters of each style of fish that were passed around the table of 18 adults and two small children. While waiting for the order, the drinks flowed around the table – margaritas, pina coladas, Pacificos, and white wines. We were lucky that our neighbors, Walt and Ana Jaap invited us to join them, their family, and the owners of the boat for this special dinner. Zipper’s was packed. There was a duo performing light with guitar and vocals.
As the food started arriving, each person was given their choice of french fries or rice, beans, and guacamole on a plate and several platters of the garlic, blackened, and battered Mahi Mahi were spread around the table. We all got the opportunity to try each preparation. There is nothing like having freshly caught fish prepared well. It was a great dinner. The garlic Mahi was incredible. I loved the fish and chips – so much in fact, that Anah gave us the leftovers to take home and we re-heated the battered fish in the oven for dinner two nights later. It was also amazing how well coordinated the staff at Zipper’s were to serve not only our large group but several others.
