CARBÓN CABRÓN IN KORAL CENTER IN THE CORRIDOR

Carbon Cabron is one of the restaurants recognized by Michelin in 2024 with a Michelin Bibs recommendation. I would like to thank Rick Giese for the photographs and comments on this very interesting restaurant. Entering the restaurant, you are immediately aware that this is a wood-fired grill. The dining room is decorated with racks of wood, ready to be used to cook your favorite item from the menu. Rick, Leann, Cody and Kelly were seated at a table, and in front of them were four wooden boxes that contained the utensils to enjoy their choices from the menu. The menu offers vegetables, seafood, and meat all prepared on the grill.

Knowing that the portions were large, the group decided to share their choices. From the vegetable portion of the menu, they selected the mushrooms, which were stuffed with an interesting combination of cheese and marinated eggplant and served on a stone platter; grilled corn with a mustard vinaigrette, and rustic aioli; and the Cabron Vegetal. From the Seafood Menu, the choice was Shrimp with a habanero aioli and asparagus. And the piece de resistance from the Black Market meat Menu, the T-Rex New York steak, which was huge and served with grilled vegetables. The server actually cut the steak for them at the table.

Rick and Cody had brought two excellent bottles of red wine with them to further enhance the flavors of the meal – from California and Valle de Guadalupe.

Overall, the foursome was enthralled with the meal – quality, flavor, portion sizes, and presentation. The service was also excellent.
