Colorado Grill in Hotel Sol de Cabo on The Corridor

For months we had watched the building being built that was to host The Cellar Fine Wine and Spirits, Solterrra Outdoor Living, and the Hotel Sol de Cabo.  The roof of that building became The Cabo Grill.  While the Facebook page bills it as a Sports Bar (I guess because there are some big-screen televisions to watch sporting events), this restaurant is really a grill.  While there are a few items that you would see on a Sports Bar menu – wings, nachos, guacamole, and hamburgers, the menu, created by Chef Christopher Berumen really reflects the items that you would find a good grill.  From a selection of steaks and ribs to grilled shrimp, sea bass, salmon, and tuna.  The grill plays a prominent place in the dining area of the restaurant so that you can actually watch your meal get prepared.  There is also a fully stocked bar at one end of the restaurant with seating if you want to sip nibble, and watch one of the televisions.

We were surprised to be greeted by Christian, our favorite server from La Salsa who led us to our table.  We were there for a very early dinner and so the restaurant was not too full.  We decided to start with drinks and some guacamole and chips.  The view of the Sea of Cortez and the rising moon were great from this top-floor location.

After looking through the restaurant Beth decided to try the BBQ Baby Back Ribs and I asked Christian if they could take the mushroom risotto from the salmon and add some vegetables for me.  He said that it would be no problem at all.

Christian brought Chef Christopher out to meet us and acted as a translator so that we could learn a little more about the restaurant.

We enjoyed our dinner and then decide to try out the. desserts.  We ordered the bananas and the brownie with vanilla ice cream.  A great way to end our meal.

The food was excellent and the service top notch. The ambience is nice and the televisions were playing music videos from the 80s.  The only downside is that like any location adjacent to the highway, the road noise was present throughout our meal.
