Don Sanchez Table Side Caesar Salad

Whenever we get the chance, we have Caesar Salad as an appetizer, especially when it is made table side. Our recent dinner at Don Sanchez in San Jose del Cabo demonstrated exactly how the traditional Caesar dressing should be made. Our server started by providing the history of where and by whom Caesar Salad had been created in Tijuana. He then mixed the traditional ingredients of the dressing – garlic, egg yolk, anchovies, olive oil, lemon and Worcestershire sauce – one at a time into the traditional wooden salad bowl. You could smell the dressing. He described each ingredient as it was added. When completed, the romaine lettuce was added and stirred into the dressing. He then served it to our two plates.
