Don Sanchez Table Side Pears Flambe

While we were enjoying our dinner at Don Sanchez in San Jose del Cabo, we saw a table side dessert being prepared at a nearby table. We asked our server what it was. He indicated that the special dessert of the day was pears flambé. Having seen the process we needed to try them. The server who had made our table side Caesar Salad came back to the table with all of the ingredients to make this interesting dessert – sliced pears, brandy, mango liqueur, lemons and some other treats. He carefully warmed the pan and started to add the ingredients for the sauce for the pears. Ultimately, the liquor in the pan was lit on fire to warm up the dish.

We everything was ready, fresh ice cream was added to the plates and the two orders were placed on the table. Here is the video. Enjoy!
