Located on Valerio Gonzalez about one block from Blvd Mijares is Egg Luv. This small restaurant on the corner has both indoor and outdoor seating and welcomes dogs. The owner, Victor Urquijo said that the restaurant opened three years ago as basically a small kitchen and has expanded since. He plans to open a location in Puerta Vallarta later this fall, and ultimately hopes to open locations around Mexico.

The menu features egg sandwiches of all kinds. You can have the egg prepared any way that you like – fluffy, sunny side up, fried, well done or “in your face”. There are 10 different egg sandwiches with lots of different ingredients. The restaurant also offers burritos and bowls on the menu, and a number of eggstras including hash browns, bacon, sausage, guacamole, avocado and more. I decided to have the El Delicioso, which came with fluffy eggs, cheese, caramelized onion, and arugula. I ordered a small extra of bacon and a Hibiscus lemonade to drink.

The egg sandwich was served wrapped in aluminum foil. I opened it up and took off the top bun (I am on a zero-carb diet). The taste of the fluffy egg with cheese and caramelized onion was terrific. I then added the bacon, which was clearly maple smoked and delicious. The fluffy egg was almost an inch high and cooked perfectly. I wish that I could have eaten it the right way (with the bun) but it was great.

While I was eating, I enjoy some of my favorite classic rock from the speakers. The restaurant was very busy with take-out orders – several people came to pick up their food while I was there. I also noticed that they offer delivery from their Facebook page on UberEats. If you like eggs, Egg Luv is a great place to stop.
